About This Coffee
This coffee comes from smallholder producers who are members of APROCOMSA, a producer organization based in Marcala. The municipality is part of Honduras’ Montecillos coffee region and the protected Denominación de Origen Café Marcala. The designation establishes standards for the coffee’s origin, production, quality, and traceability.
The coffee is processed as a full natural. Ripe cherries are delivered to APROCOMSA’s centralized mill and floated to remove less-dense and damaged fruit. The selected cherries are dried on patios and raised tables using sun and mechanical dryers until they reach approximately 11% moisture. After drying, the coffee is stored before preparation for export.
At APROCOMSA’s dry mill in Marcala, the coffee is hulled and sorted by density and color. Trained cuppers and Q Graders evaluate it before export, supporting quality control and traceability through the post-harvest process.
Finca Humana — “The Human Farm”
Finca Humana, or “Human Farm,” is APROCOMSA’s approach to agricultural education and development. It places people and their relationship with the environment at the center of its work.
At La Fortaleza, a demonstration farm, producers share agricultural knowledge and explore farming practices and technologies. APROCOMSA’s broader educational work supports producer families and the development of coffee-growing communities in Marcala.
Honduras and the Marcala Region
Honduras has one of Central America’s largest and most diverse coffee industries. Coffee is cultivated in 210 of the country’s 298 municipalities and 15 of its 18 departments, supporting more than 100,000 coffee-producing families. The country’s coffee-growing areas are organized into six principal regions, each shaped by its own elevations, climate, soils, and growing traditions.
The protected Café Marcala region encompasses 202 villages across 19 municipalities in La Paz, Comayagua, and Intibucá. It was the first registered coffee designation of origin in Honduras and Central America. This coffee is specifically sourced from producers in Marcala municipality, in La Paz.
