This coffee comes from a cooperative group of coffee farmers (smallholder members) that are dedicated to environmental protection as well as producing high-quality coffees using organic growing techniques and processes. CESMACH stands for Campesinos Ecologicos de la Sierra Madre de Chiapas and has nearly 500 active members.

Flavor Profile

This coffee is rich with a sweet cocoa note upon first taste. It has a very mild lemon note with black tea tones but really stands out with some Valencia peanut flavors. During cool-down it tends to show some sweet plum notes. Easy to drink but complex and fun.

 

Details

The average farm size of those that are part of the Cooperative is between 2–5 hectares (5-12 acres) and long history with the Fair Trade movement. These Cooperative farms are located in the El Triunfo Biosphere Reserve, which is in the highlands of the Sierra Madre. It is one of the most diverse forest reserve areas in the world and contains Mesoamerica's largest cloud forest, as well as a protected natural environment for thousands of plant and animal species. All of the coffee produced here is shade-grown.
